Mountain Breakfast Pizza
makes 8-10 servings
2 tbs. butter
1 cup whole wheat pastry flour
2/3 cup, plus 2 tbsp., all purpose flour
1 tsp. baking powder
1/4 cup real maple syrup
1/2 cup milk
2/3 lb. bulk pork sausage
1/2 green bell pepper, diced
9 lg. eggs
1 1/3 cups shredded cheddar cheese, divided
Maple syrup or ketchup for serving
1. Preheat oven to 425 degrees. Place butter in
a 9 x13 inch baking dish and melt in the oven
(about 5 minutes).
2. In a large bowl, mix next 7 ingredients.
3. Knead dough mixture for a few minutes and
make a ball. Press dough into buttered baking
dish. Bake 12 minutes. Remove from oven.
4. While crust is baking, brown sausage and
bell pepper in skillet. Stir frequently to break
up meat. Place cooked sausage and bell pepper
on platter (reserve drippings in skillet) and
keep warm.
5. Beat eggs in mixing bowl. Pour into
drippings in skillet. Stir frequently.
6. Add 2/3 cup cheese while eggs are cooking.
7. When crust is done, top with sausage,
then eggs, and then remaining cheese.
8. Bake 10 more minutes or until cheese is melted.
9. Serve immediately with maple syrup or ketchup.
