New-Fashioned Corn Relish
FAMILY REUNION MENU AND RECIPES
New-fashioned Corn Relish
1 small onion, chopped (about 1 cup)
1/2 c. sugar
1/2 c. cider vinegar
2 tsp. celery seeds
1/2 tsp. mustard seeds
1 (15.25 oz.) c. whole kernel corn, drained
1/2 c. chopped celery
1/4 c. sweet pickle relish
1 (2 oz.) jar diced pimiento, drained
STIR together first 5 ingredients in a 3 quart saucepan; bring to a boil. Reduce heat, and simmer, uncovered, 10 minutes.
STIR together corn and remaining 3 ingredients in a large bowl; pour hot vinegar mixture over corn mixture, and stir gently. Cool completely
(about 2 hours). Store relish in an airtight container in refrigerator.
Yield: 2 1/2 cups.
